About this record
Stephen Moulton Babcock (1843-1931) was the Univ. of Wisconsin professor who in 1890 invented a test to measure the fat content of milk. The Babcock Test was quickly embraced by farmers all around the world because it allowed them to discover and document the precise composition of their product. It helped raise dairying from an agriculture sidelight to a efficient, scientific discipline. In this short interview, Babcock explains how he invented the test that made modern dairy farming possible.Citation
