About this record

Dr. Stephen Moulton Babcock (1843-1931), a professor at the University of Wisconsin in Madison, invented a test in 1890 that permitted farmers to measure the fat content of their milk. This enabled them to systematically produce cream, butter, cheese, ice cream, and other dairy products that met specific market standards. He is shown in this photograph in the mid-1920's, with a butterfat tester.
